Characterized by their bright blue, or rich yellow and brown striped shells, they are one of the largest shrimp with long claws and growing to over a pound in weight and a foot in length.  Usually shipped live these shrimp tend to loose a lot of there texture and body weight when cooked.   Their taste is mild and their flesh has a tendency to become gray when cooked.
