Soft Shell Crab, a specialty of the east coast of the U.S. and Venice, is a blue crab (a shore crab caught when shedding its shell). The new forming shell is soft and translucent. The crab is trimmed of its gills and eyes and eaten whole, usually fried crisp or sautéed in ample amounts of butter.
