Snapping turtle has the texture of frog legs or lobster. The four legs and the tail are dark meat; the neck and back straps are white meat.

The pinkish white meat of the turtle is a cross between seafood and game. Snapping turtles can be farmed, the meat is often sold semi boneless with some cartilage, which is easily removed after cooking.
