Katahdin .originated in Maine in the 1920's. The potatoes are large,
short, elliptical to roundish, medium thick. The skin is smooth
and dark, creamy buff with shallow eyes that are the same color as the
skin. The Katahdin has white flesh. This variety is late
maturing, adapted to a wide range of conditions. It producer potatoes
of good shape, but the quality is generally medium. It is a good
potato
for potato chips
