To Prepare Peas for Cooking and Serving  
Shell peas. It is sometimes possible to obtain such young and tender peas that they are delicious cooked in the pods. Young fresh peas can be eaten raw. Cooked peas should be drained well before serving. It is now possible to buy shelled fresh peas in some markets.

Test for Doneness Tender but not soft. Taste. For purees and soups, boil until very soft.
