Only two of the many varieties are grown for the commercial
market - Scotch Kale and Blue Kale. Scotch Kale forms the grater
bulk of the early market with Blue Kale, considered to be hardier and
there for used for late plantings..
Scotch Kales tend to be extremely curled, wrinkled, and
finely decided divided leaves, and most have bright green or yellow green
color. The Siberian Kales have leaves usually flattened and smooth in
the centers with curled and ruffled edges and have a deep bluish green color.
The smooth leafed kales have little curl and are often marketed in late
spring and early summer.
