To Prepare Cucumbers for Cooking and Serving
Trim, peel and either slice, quarter or halve. Drain well before
serving. To prepare for raw cucumber dishes, score skin with a fork or
scoring knife and slice evenly, or use a mechanical slicer. For raw
salads, salt cucumber slices well, place in colander and weight down to
