Galician Sausage [cooked, smoked sausage]
Cured meats are seasoned, and stuffed-into beef
rounds cut to 36-in.lengths. Sausages are then smoked, with a very
high, final temperature baking the sausage. Cooling is done in a
draft of air, which produces the wrinkled appearance characteristic
of Galician Sausage.
