Congee, a soup, essentially, in which a small amount of rice has been cooked in a large quantity of water for several hours. Congee prepared in advance is eaten for breakfast with salted eggs or other highly flavored foods, also as a late evening snack when bits of beef, chicken, pork, or sliced raw fish are added.
