Nantua Sauce - Sauce Nantua

A béchamel sauce flavored with crayfish butter and garnished with diced crayfish.  As an alternative to crayfish  (cold water shrimp) shrimp and shrimp butter may be used. This sauce is also prepared using a white wine sauce as a base.
