Chile does not have the beef industry of Argentina, but it does have
great commercial seafood, fruit and vegetable industries. which supplies us with much of the fresh
fruit we have during our
off-season. With the cold, rich plankton-filled waters that are much
like the waters of Alaska, seafood is very abundant. It is very common to
find Chilean seafood in U.S. markets today.
A favorite sauce in Chile, is a sauce that is used in a multitude of dishes called
adobo, made from ground
garlic and paprika that are fried in oil to make a paste. It is used as
base in many other dishes
and sauces.
