Tortillas were made by both the Mayans and Aztecs and
are still used today by almost all of the people of Mexico corn flour
being the main ingredient.
In the northern part of Mexico, large cattle ranches
were established as a carryover from the Spanish. With the cattle also
came a large dairy industry. Any area that will sustain cattle can also
grow wheat. The tortillas in this region may be wheat or flour, depending
on taste.
However, since corn is a much cheaper ingredient, it is more popular.
