Cortes wrote about the great number of foods that the Aztec Chief Montezuma ate, numbering over 1000. During the time Cortes was at the court of Montezuma, he put on a European feast for the Royal Court. He had ordered his men to slaughter some pigs and spit roast the meat for the court to taste. It was this act that changed the cuisine of Mexico forever. The Europeans showed the native Indians the method of spit roasting, how to catch the fat dripping off the cooking pork. and how to use it to fry foods. Before that act, there were no grease, oils or means to fry food. It is now said that "Mexican cooking consists of pork and frying". This saying is some what true, as a lot of Mexican dishes contain ingredients that are partially or totally fried. Unlike most fried foods, they are not greasy. Frying is done to change the flavor of food "especially in moles" rather than as a cooking method. |
