The Maroons and the Boucan (from which the word buccaneer was adapted), is Spanish for the escaped prisoners and pirates who devised a new way of cooking. They used food that was tasty and portable. Which was made while eluding the Spanish, French and British. This style cooking was a barbecue. They used a fiery wet or dry marinade called Jerk. This style of cooking calls for the main ingredient allspice berry (known as pimento in Jamaica, no relation to the sweet pepper). fiery scotch bonnet chiles, onion, garlic, bitter orange peel and spices that were brought into the New World, such as nutmeg, black pepper and cloves. The ingredients of jerk are pounded into a thick paste and rubbed on the meat before it is barbecued. over coals in which allspice wood is burned. This gives the food a spicy, smoky flavor.
