A type of cheese traditionally was made with buffalo milk, but today cow's milk is used that originates from Apulia, in southern Italy. Considered by many the best fresh cheese in the world. Classified as a "spun" or "pulled curd" cheese the one pound loaf looks like Mozzarella but it has a more buttery taste, and has a higher fat content than Mozzarella. When you bite or cut into Burrata, the cream oozes out. Mildly sweet in flavor, burrata is not aged and is sold immediately after being produced. A rare delicacy from Italy's Puglia region, it is wrapped in asfodelo leaves (an herb-like plant similar to leeks), which indicate the freshness of the cheese. As long as the outer wrapping stays green, the cheese within is still fresh . Burrata is highly perishable and should be eaten as soon as possible after purchase. It will keep for only a few days in the refrigerator.
