In the preparation of condensed milk, sugar is added to
the milk before the evaporation process is initiated. This milk contains not less than 28.0 percent
milk solids and 8.3 percent milk fat. The sugar, which represents about 40 to 45 percent of the condensed milk, acts as a preservative. The milk, sealed in cans can be stored without
further heat treatment and without refrigeration.
