Raccoon populations in some areas of the country carry roundworm which are
found in their pelt and droppings. It is rare but this parasite can be
transmitted to human therefore hunters should use gloves while skinning
and dressing game.
Young raccoons are tender and tasty when roasted but older
raccoons (those over10 pounds when dressed) should be braised as they are
very tough and strong tasting.
The Raccoon may be stuffed with herbs, onions, dried fruit
and nuts.
