The most delicate of syrup
have a subtle maple flavor the darker syrups are caused by warmer weather
which results in darker sap and a more intense maple flavor: Maple syrup is divided into 4 grades: Grade A Light Amber, called "Fancy" -- very delicate flavor Grade A Medium Amber - considered an all purpose syrup used for pancakes and to flavor dressings etc. Grade A Dark Amber used for glazes, sauces, meat flavoring (pork) Grade B the darkest and strongest syrup is often used for cooking and to add flavor to processed foods.
