The only way to truly judge honey is by tasting it but clues can sometimes be found it its appearance.

Clarity is not always a positive. Most mass produced honeys are defined for clarity, homogenized, and blended to achieve uniform flavor, and heat treated to prevent crystallization.  These processes remove solids that have flavor and nutrition.  Cloudy or crystallized honey can sometimes have a peeper and richer flavor.

If the label states raw honey the honey has had little if any manipulation or processing

Unprocessed honey does not qualify for Grade A "Fancy" or Grade B "Choice" so it is important to understand that these designations do not really measure the quality of the product.
