Quinoa is the most nutritious of all of the grains. and contains twice the
protein of all the major grains. enough protein to compare with beef, thus
earning its nickname .'super grain", with a balance of all eight amino
acids, which help make up the protein. It is exceptionally high in lysine.
an amino acid which is not abundant in the vegetable world (with the
exception of legumes) and aids in helping the body to release the niacin
in corn. an Indian staple. Quinoa also contains a fair amount of
Methionine and Cystine, which legumes don't. It's also a good source of
phosphorus. calcium. iron. Vitamin E and several of the B Vitamins. This
unique food is also higher in unsaturated fats and lower in carbohydrates
than most grains. and contains 50% more fiber than wheat: only buckwheat
and oats contain more fiber. Overall. this "super grain" provides a rich
balance source of vital nutrients.
