There are five basic indigenous corn from which all modern corn have descended. Sweet, flour dent, flint and pop corn. Sweet corn is a stand alone vegetable that is boiled, grilled and eaten off the cob. Flour, dent, flint and popcorn are grain crops.

Corn is commercially milled into flour in two ways.

  • Wet milling that involves soaking the corn then crushing it between two steel rollers

  • Dry milling where the corn is crushed without soaking.

How the corn is ground effects the flavor. Because no germ is in commercial meal it does not have the sweetness and nutty flavor of the stone ground whole meal.
