Bittersweet and semisweet are members of the most important category for the serious chocolate consumer. Bittersweet and semisweet are not different by definition and each must contain at least 35 percent chocolate liquor.

The darkest of the eating chocolates, they have the richest chocolate flavor. This chocolate is used in desserts and confections as well as being eaten out of hand.

There are tangible differences between bittersweet and semisweet chocolate.  The bittersweet will usually have a more pronounced chocolate flavor as it has a larger concentration of chocolate liquor and lower sugar content than semisweet. A high quality bittersweet chocolate will have more of a fruitiness in its flavor because there is les sugar used.
