Sea Urchin
Sea Cucmber




1) Portion one cucumber per person.
2) Take a sharp fillet knife and cut off each tip of the animal to clean.
3) Insert the knife into the hollow "tube" and split it open as if you were slicing open a section of inner tube.
4) Open the animal up and lay it out like a piece of paper.
5) Wash or wipe away the internal organs.
6) The edible parts are the 5 long, narrow strips of longitudinal muscle (they are colored sort of a grey translucent).
7) Cut or peal these off. Start by gripping one end and starting a cut with a knife; once it's started peal the rest out.
9) This meat is very tender. The Sea Cucumber is very easy to overcook!
10) Just a few seconds is all it takes (watch for color to change to white).
11) When your done, the texture is a little like squid and can be served over green salad, pasta or just by itself!
