A stalk and shoot vegetable. A member and the most delicate tasting
of the onion family. A
cylindrical bulb, the outside and green part of leaves have to be removed
and the root trimmed off before cooking. 1 bunch serves 2 .
Best known for the French Leek and potato soup, cold
vichyssoise. It combines well with chives, potatoes, ham, butter, cream,
mushrooms and hard-cooked eggs, and can be used as one would asparagus.
