  Cos or Romaine easily recognized by the upright 
      character of the plant with long, narrow leaves form a loaf shaped head.  
      The varieties are divided into self closing and loose closing types.  
      The leaves of the self closing varieties curve inward at tips and form a 
      closed head.  The loose closing varieties will not form a closed 
      head.  The leaves appear coarse, but are tender, sweet, and tasty and 
      have less bitterness than other varieties. The dark outer leaves and 
      yellowish inner core are attractive and flavorful in salads.  The 
      table quality is excellent. The stiff and tender leaves are easily torn 
      and crushed so great care must be taken when packing and transporting 
      these elongated heads.  Common Varieties are Dark Green and
