With rich reddish purple meat and a hint of gaminess, goose can be an appealing change on your menu from the usual chicken and turkey.  Geese fall between ducks and turkey weighing between 9 to 18 pounds with most weighing from 10 to 14 pounds. 

To Roast a 12 to 14 pound goose place in a preheated oven for about 3 hours at 350°F or until the thickest part of the thigh reaches 165°F. Baste frequently and place a small amount of water in the bottom of the pan to avoid spattering and pour the fat off about halfway through the cooking process.
