This item is prepared from Item Nos. 401A or 402A. All bones, cartilages, skin and surface fat in excess of 1/2 in. shall be removed. Fat on the butt end shall be beveled back at least 1 in. from the edge of the lean. Shank meat which is naturally attached may be included, and shall be folded into the femur bone cavity as a plug. The ham shall be tied lengthwise and girthwise.
