The cuts of meat which have the greatest monetary value in the marketplace are from the back or hindquarter of the animal. The female animal usually has a heavier and, therefore, more valuable hindquarter than the male animal. When a male animal has its male hormones removed at an early age, the muscular development is then much like the female with the hindquarters being heavy.
