Pork (Hogs)
Barrow a male animal which has had the male hormones removed when very young.
Gilt a female animal which has never borne pigs.
Sow a female animal which has borne pigs.
Boar a male animal which has matured with male hormones intact.
Stag a male animal which has had its male hormones removed after reaching maturity.

It is easy to remember hog classifications by equating the animals with their rough equivalent in bovines:

Barrow = Steer Gilt = Heifer Sow = Cow Boar = Bull Stag = Stag
