Care

	Take great care in the selection and storage of the products to be used.
	Always carefully wash and dry the products before using
	Pre-chill all ingredients prior to putting the salads together
	Work with small amounts of ingredients at a time to insure that the product temperatures remain optimum
	Setup salads on well chilled dry dishes

Structure

	Mix several types of fresh in season greens together utilizing different textures and colors
	Use small amounts of products like cheese and nuts so as not to over power the delicate flavors of the salads base
	If you are using stronger flavored vegetables , stronger marinates or dressings may be used
