Hang or Suspension Smoking Technique
This Technique is used for larger pieces of product
that will take an extended period to achieve the proper degree of
doneness. With this method the product is suspended higher in the pan
using butchers net or twine, to insure that the bottom will not over
cook or burn. The suspension technique allows free flow around the
product and allows the product to maintain more of its natural shape.
The Wood Fired Salmon Recipe is an example of this technique
utilizing Salmon.
