Cold Consommé
A
double consommé that has been de-fatted and seasoned with Madeira,
or port wine and cayenne pepper.
The
double consommé is portioned into cups while still warm and
allowed to cool. It may be served with sautéed vegetables or
peeled, seeded and diced tomatoes as a garnish. A cold consume
is always strong and spicy and slightly gelled.
