| Cut through the base of the
tailbone, starting on the underside of the tail. Stop when the
bone is severed: be careful not to cut through the skin on the top side
of the tail.

| Place the squirrel on the ground,
back side down, and place your foot on the base of the tail where your
cut was made. Pull up on the rear legs, peeling the skin all the
way to the front legs.

| Peel the off the skin from the
rear legs (called the britches) to the ankle joints. Keep your
foot firmly on the base of the tail until all skinning is complete.

| Remove the squirrel's back feet
by cutting through the ankle joints with a knife or game shears.
If using a knife, be sure your knife motions are cutting away from
yourself.

| Pull each front leg out of the
skin, as far as the front wrist joint. Use the fingers of your
free hand to help loosen the skin at the elbow. Then cut each
front foot off at the wrist joint.

| Cut the head off. Remove
any glands that may remain after field dressing and clean out the body
cavity and rinse briefly under running water and pat dry. Several long
hairs usually remain on the wrists; cut these off with your knife or
shears. |
