Pinch the hide up and away from the middle of the rabbit's spine. Slit the hide from the spine down the sides, being careful not to cut the meat,

Grasp the hide with both hands and pull in opposite directions.  Keep pulling until all legs are skinned up to the feet.

Cut off the head, feet, and tail.  If you did not field-dress the rabbit before skinning, slit the underside from vent to neck, then remove all internal organs. Save liver and heart if desired.

Clean the body cavity, removing any material left after dressing.  Rinse briefly under running water and pat dry.
