From Hindquarters
From Head

1.  Cut the hide along the inner side of each hind leg. The cut is made from the inside of skin with the knife edge facing out.

2.  Peel the hide away from the legs, peeling until are skinned and out of reach of the tail.

3.  Sever the tailbone close to the animal's rump.  Leave the tailbone inside the skin.

4.  Continue peeling, using your fist to free the hide along the back. Use a knife only where necessary; take care not to cut a hole in the hide.

5.  Cut along the inside of each front leg and peel the hide back. Saw off the front legs just above the joint and then keep skinning until you reach the head.

6.  Cut off the head at the atlas joint by cutting around the neck at the base of the skull.  Twist the head to pop the Atlas joint.
