1.  Cut the skin around the base of the head.  then peel the hide away from the neck with your fingers, using the knife only when necessary.

2.  Peel the hide over the shoulders.  Saw off the front legs above the joint.  Pull the hide off the front legs.

3.  Keep skinning down to the rump. Sever the tailbone; cut off hind legs above knee.  Pull hide completely off
