There are two classifications of goose; young goose and mature or old goose. The young goose may be either sex. These birds are recognized by tender meat and a pliable windpipe that is easily dented. A mature goose may be either sex. It has tough flesh and a hard windpipe. Goose can be purchased fresh or frozen year-round, ready to cook. A pound of ready to cook weight equals one portion cooked.
