Extra-virgin olive oil is extracted from the first cold pressing of the
olives and has no more than one percent acid. The flavor color and
aroma can vary drastically depending on the growing region and condition
of the crop when harvested.
Extra-virgin olive oil ranges in color from pale golden to
grass green, The deeper the color of the oil the stronger the
flavor. Oils with a more golden color tend to have a deep nutty to
mellow flavor while greener oils have a grassier edge.
