Squid, the most popular of this class, octopus and
cuttlefish are used in many ethnic dishes. Cephalopods are very meaty, but
within each is a cartilage or cellophane-like skeleton. The squid is the
sweeter of the meats, but all must be either quickly cooked in high heat,
or for long periods of time under slow heat, since they become tough very
easily.
