With a good amount of intra muscular fat, the Large Black is extremely moist, juicy
and flavorful. It has a strong texture in the mouth yet remains soft and
delicate when you chew it. The Black produces smallish shoulders, but tasty lean
hams. The Large Black is an orchard pig developed from the black pigs of Devon
and Cornwall and the European pigs found in East Anglia. There remain fewer than
200 registrations of Large Blacks in the United States.
