  Physically, homogenized milk differs from ordinary whole milk in that there is no separation of cream, and the product remains uniform throughout. Small differences in color and viscosity may be noted in the homogenized milk, and there is a slightly "richer" taste. Homogenization lowers the curd tension that results in the formation of a softer curd during human digestion.
