Sturgeon, White Acipenser transmontanus The white sturgeon is the largest fish in North America with some reports of fish nearly 20 feet long and weighing 1,800 pounds. It is also one of the longest living fish--old-timers reaching the century mark and beyond. White Sturgeon, harvested in the Columbia River between Washington and Oregon are considered to be of the highest quality. Farmed sturgeon from California are the White Sturgeon variety and make up most of what is on the market today. The legal size for sturgeon now are between 4 to 6 feet in length and a weight of 15 to 80 lbs. Farmed Sturgeon are harvested at 10 to 15 pounds
