Carrot and Pepper Mouse with Enoki and Mixed Greens

Amount Measure Ingredient
slices Carrot/Pepper Mousse
4 ea  Spring roll with greens
teaspoons peppers, minced
tablespoons Vinaigrette
 
Remove mousse from mold and slice on an angle, place one slice on each plate at an off set angle.  Stand the spring roll with greens that have been tossed in the dressing, in the center of the plate.  Place the diced pepper mixture in the front and back of the spring roll.  Spoon the vinaigrette in front of the mousse.
