Savory Shiitake Risotto

Amount Measure Ingredients
Tbsp Butter 
Tbsp Shallots, minced 
clove Garlic, minced 
ea  Shitake mushrooms, chopped 
oz Arborio rice 
pt Duck stock, hot 
pt Water, hot 
oz  Dry white wine 
1/4  tsp Parsley, chopped 
oz Parmesan, grated 
  To taste Salt & Pepper
 
Procedures 
1. Sweat onions, garlic in half the butter 
2. Add shitake, sauté.
3. Deglaze with white wine.
4. Add rice, stir until toasted aroma develops.
5. Add the stock in 3 additions, stirring frequently. 6. Add seasonings and cheese to taste.
