Chocolate Mousse

Amount Measure Ingredients
2.10 ounces Egg Yolks
0.875 ounces Whole Eggs
4.55 ounces Dark Chocolate
1.75 ounces Granulated Sugar
0.875 ounces Water
2 sheets Gelatin
7 ounces Cream, Whipped
 
1. Whip cream to soft peaks and reserve.
2. Whip eggs and yolks with sugar until light and fluffy.
3.
Bring water to a boil and temper into egg mixture.
4. Bloom gelatin, melt over double broiler, temper into egg mixture.
5. Melt chocolate, fold into egg mixture.
6. Fold into whipped cream.
