Herbed Cracker

Amount  Measure  Ingredient
1 large  Egg white
1 ounce  Black eyed peas. pre soaked
1 to taste  Salt and White pepper
ounces  All purpose flour
sprigs  Chives. chopped
sprigs  Fresh dill. chopped
1 bunch  Parsley. chopped
     
Preparation:
Puree black-eyed peas to a paste consistency, add herbs and spices. Slowly add flour until dough is formed. Knead dough and put through a pasta machine until very thin. Cut dough into triangle shapes and sauté in a small amount of oil until golden brown.
