| 1 | large | Egg white |
| 1 | ounce | Black eyed peas. pre soaked |
| 1 | to taste | Salt and White pepper |
| 3 | ounces | All purpose flour |
| 6 | sprigs | Chives. chopped |
| 3 | sprigs | Fresh dill. chopped |
| 1 | bunch | Parsley. chopped |

Preparation: Puree black-eyed peas to a paste consistency, add herbs and spices. Slowly add flour until dough is formed. Knead dough and put through a pasta machine until very thin. Cut dough into triangle shapes and sauté in a small amount of oil until golden brown. |
