Clarification Meat/Raft

Amount  Measure  Ingredient
ounces  Duck breast
4 large Egg whites
1 tsp.  Tomato
1 tsp.  Celery
1 tsp.  Onion
1 tsp.  Tamarind
to taste Salt
     
Preparation:
Blend all ingredients in a robo coupe until coarse. Add to duck stock. Clarify for approximately 35 minutes. Using a baster and rubber tube, extract clear liquid from the stock into a china cap filled with cheesecloth to remove all solid ingredients.
