Potato Celeriac Puree

Amount Measure Ingredients
ea. Potatoes, medium 
oz Celeriac .
  to taste Salt, sugar
1/2 oz Butter
3 oz Cream
  to taste White Pepper
     
Method:
Cook potatoes and celeriac in water, drain, pass through a food mill. Adjust consistency with heated cream. Adjust seasonings. Fill pastry bag -keep heated for service.
