Herring Onion Custard

Amount Measure Ingredient
oz. Idaho Potatoes, small dice 
oz. Red Onion, small dice 
oz. Herring, small dice 
T. Butter 
1/2 cup Heavy Cream 
each Egg 
tsp. Parsley, chopped 
tsp. Thyme, chopped 
  to taste Salt and White Pepper
     
Method
Blanch potatoes. Sauté the onions, herring and potatoes in
butter. Combine heavy cream, egg and herbs in a bowl add the sautéed garnish -season to taste. Arrange the cooled, pre-baked tartlets shells on a half sheet and spoon in custard mixture.
Bake at 375°  degrees until tartlets is puffed and golden brown.
