Herring Onion Custard |

| 2 | oz. | Idaho Potatoes, small dice |
| 2 | oz. | Red Onion, small dice |
| 2 | oz. | Herring, small dice |
| 1 | T. | Butter |
| 1/2 | cup | Heavy Cream |
| 1 | each | Egg |
| 1 | tsp. | Parsley, chopped |
| 1 | tsp. | Thyme, chopped |
| to taste | Salt and White Pepper | |

Method Blanch potatoes. Sauté the onions, herring and potatoes in butter. Combine heavy cream, egg and herbs in a bowl add the sautéed garnish -season to taste. Arrange the cooled, pre-baked tartlets shells on a half sheet and spoon in custard mixture. Bake at 375° degrees until tartlets is puffed and golden brown. |
