1-1/2 | Teaspoons | Baking Powder |
1/2 | Teaspoon | Salt |
1 to 1-1/2 | Cups | Hot Water |
1/2 | Cup | Bacon Fat or Canola Oil Oil for frying |
Preparation In mixing bowl, add corn meal, baking powder, salt, water and 3 tablespoons bacon fat, mix well. (should be fairly loose or watery) In a cast iron skillet or heavy frying pan, heat and add remaining bacon fat (should be about 1/4" deep). Drop pones batter by the teaspoon and spread slightly (should spread out to 2 to 3 inches in diameter) into hot fat they will spread out and should have lacy hole in them, it's the holes that make the wispy and crispy. Allow them to fry until golden brown on one side, before trying to turn them or they will fall apart. Turn over, fry until golden brown on both sides. Serve warm. |
